Ingredients

  • 1/2 cup rolled oats
  • 1/3 cup pumpkin puree
  • 1/2 cup milk (any type)
  • 1 tbsp maple syrup
  • 1/4 tsp pumpkin spice
  • 1/2 tsp vanilla extract
  • 2 tbsp Greek yogurt (optional)
  • 1 tbsp chia seeds (optional)

Equipment

  • jar or bowl
  • mixing spoon
  • measuring cups
  • refrigerator

Method

  1. Add rolled oats and pumpkin spice to a jar or bowl and stir to combine evenly.
  2. Add pumpkin puree, milk, maple syrup, and vanilla extract to the oats.
  3. Stir thoroughly until all ingredients are well combined and no dry oats remain.
  4. Adjust the texture by adding a splash of milk if the mixture is too thick.
  5. Cover the jar or bowl and refrigerate for at least 4 hours or overnight.
  6. Stir before serving and add your favorite toppings if desired.

Notes

Adjust sweetness to taste with maple syrup or honey. For a thicker texture, add chia seeds or Greek yogurt. For a dairy-free version, use plant-based milk. Store in airtight jars for up to 3–4 days and add toppings just before serving for best texture.
