Lemon Chia Seed Pudding

Lemon chia seed pudding is a creamy no-cook breakfast made by soaking chia seeds in milk with fresh lemon juice, lemon zest, and a light sweetener. After chilling, the chia seeds absorb the liquid and form a thick pudding texture with bright citrus flavor. Ingredients
  

  • 3 tbsp chia seeds
  • 1 cup milk of choice (almond, oat, coconut, or dairy)
  • 1–2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1–2 tsp honey or maple syrup
  • 1/2 tsp vanilla extract (optional)

Method
 

  1. Add chia seeds and milk to a mixing bowl or jar and stir well to combine.
  2. Add fresh lemon juice and lemon zest to the mixture and stir until evenly combined.
  3. Add honey or maple syrup and vanilla extract if using, then stir until the sweetener is fully blended.
  4. Wait about 5 minutes and stir the mixture again to prevent chia seeds from clumping together.
  5. Cover the jar or bowl and refrigerate for at least 2–4 hours or overnight until the pudding becomes thick and creamy.
  6. Stir the pudding once more before serving. Add optional toppings such as berries, yogurt, or coconut flakes and enjoy.

Notes

For the best texture, stir the mixture once again about 5 minutes after the first mix to prevent clumps. Refrigerating overnight creates the creamiest pudding. You can use dairy milk, almond milk, oat milk, or coconut milk depending on preference. If the pudding becomes too thick, add a splash of milk and stir. Optional toppings include fresh berries, yogurt, coconut flakes, or a spoon of lemon curd.
