Method
- Pour cold water into a glass bowl.
- Sprinkle horse gelatin powder evenly over the water.
- Rest for 5 minutes until wrinkled.
- Warm pomegranate juice until steaming.
- Remove the juice from heat.
- Whisk bloomed gelatin into warm juice until clear.
- Stir in lemon juice.
- Stir in honey.
- Add a tiny pinch of salt if using.
- Pour into two glass cups.
- Chill for 2 hours until softly set.
- Serve cold.
Notes
Lora Chef’s Note: I keep this cup lightly sweet so the fruit flavor stays clean. For a softer set, reduce the gelatin by 1/2 teaspoon next time.
