Ingredients
  

  • 2 cups cooked chicken (grilled, baked, or rotisserie)
  • 2 cups cucumbers, chopped
  • 1 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill or parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Use grilled, baked, or rotisserie chicken. Cut into bite-sized pieces or shred it.
  2. Slice cucumbers into small chunks. Optionally dice tomatoes or onions.
  3. In a bowl, mix Greek yogurt, lemon juice, olive oil, and minced garlic. Add salt, pepper, and fresh herbs, then stir until smooth.
  4. Add chicken and cucumbers to a large bowl. Pour the dressing over and mix well.
  5. Let the salad chill in the fridge for 10–15 minutes before serving to enhance flavor.

Notes

Use rotisserie chicken to save time. Remove cucumber seeds to avoid excess water. For best flavor, chill the salad for 10–15 minutes before serving. You can add feta cheese, olives, or cherry tomatoes for extra flavor.
