Ingredients
  

  • 4 boneless chicken breasts or thighs
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice (optional)

Method
 

  1. Pat the chicken dry with paper towels to help the seasoning stick and encourage a golden crust during cooking.
  2. In a small bowl, mix olive oil, minced garlic, parsley, oregano, thyme, salt, pepper, and lemon juice until well combined.
  3. Rub the garlic herb mixture over both sides of the chicken pieces. Let the chicken rest for about 20 minutes so the flavors absorb.
  4. Heat a skillet over medium heat and add a small amount of oil. Once hot, place the chicken in the pan.
  5. Cook the chicken for 5–7 minutes per side until golden and cooked through.
  6. Check that the internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before serving.

Notes

For deeper flavor, marinate the chicken for up to 4 hours before cooking. You can bake, grill, or pan-sear this recipe depending on your preference. Serve with roasted vegetables, rice, pasta, or potatoes for a complete meal. Leftovers can be sliced and used in wraps, salads, or grain bowls.
