Dr William Li Gelatin Recipe

A simple pre-meal gelatin cup made with pomegranate juice, water, and plain gelatin. Chilled until spoonable and enjoyed before a meal as a light, satisfying snack.

Ingredients
  

  • 2 cups 100% pomegranate juice
  • 2 tablespoons unflavored gelatin
  • 1/4 cup cold water
  • 1 teaspoon fresh lemon juice (optional)

Method
 

  1. Pour the cold water into a small bowl. Sprinkle the unflavored gelatin evenly over the top and let it bloom for 5 minutes.
  2. Add the pomegranate juice to a small saucepan. Warm over low to medium heat until steaming, but do not boil.
  3. Add the bloomed gelatin to the warm juice. Whisk for 1–2 minutes until fully dissolved and smooth.
  4. Stir in the lemon juice, if using.
  5. Pour the mixture into 4 small cups or jars.
  6. Refrigerate for 3–4 hours, or until fully set. Overnight chilling provides the best texture.
  7. Serve one small cup 15–30 minutes before a meal.

Notes

Recipe Notes:
  • Use unflavored gelatin, not collagen peptides. Collagen dissolves but will not create the proper gel texture.
  • Pomegranate juice provides the best tart flavor, but tart cherry, cranberry, or mixed berry juice can also be used.
  • Avoid fresh pineapple, kiwi, papaya, or mango juice because their natural enzymes can prevent gelatin from setting.
Storage: Cover and refrigerate for up to 3–4 days.
Serving Size: 1 small gelatin cup (about 1/2 cup).
