Ingredients
  

  • 1 cup cottage cheese
  • 1 cup raspberries (fresh or thawed frozen)
  • 2–3 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract (optional)

Method
 

  1. Add the cottage cheese to a blender or food processor and blend until completely smooth and creamy.
  2. Add the raspberries, honey or maple syrup, lemon juice, and vanilla extract.
  3. Blend again until the mixture becomes smooth, creamy, and evenly pink.
  4. Taste the mixture and adjust sweetness if needed by adding a little more honey or maple syrup.
  5. Transfer the mousse to serving glasses or bowls and refrigerate for 30–60 minutes until slightly thickened.
  6. Serve chilled and top with fresh raspberries or whipped cream if desired.

Notes

Blend the cottage cheese first until completely smooth before adding other ingredients for the best mousse texture. For an ultra-smooth finish, strain the blended raspberry mixture through a fine sieve to remove seeds. Chill for at least 30–60 minutes to help the mousse thicken. Fresh raspberries give the brightest flavor, but thawed frozen berries work well year-round. Store covered in the refrigerator for up to 2–3 days.
