Ingredients
  

  • 2 cups brewed green tea, herbal tea, lemon water, or other low-sugar liquid
  • 1 tbsp unflavored gelatin
  • 1-2 tsp monk fruit, stevia blend, or natural sweetener of choice

Method
 

  1. Pour ½ cup of the cool or room-temperature liquid into a small bowl.
  2. Sprinkle the unflavored gelatin evenly over the liquid and let it bloom for 5 minutes.
  3. Warm the remaining 1½ cups of liquid until hot but not boiling.
  4. Whisk the bloomed gelatin into the hot liquid until completely dissolved.
  5. Stir in the sweetener and taste. Add more only if needed.
  6. Pour the mixture into 4 small jars or cups.
  7. Refrigerate for 2–4 hours, or until fully set.
  8. Serve cold.

Notes

For a firmer texture, use 1¾ cups of liquid instead of 2 cups. For a softer spoonable texture, use 2¼ cups of liquid. Add a tiny pinch of sea salt to brighten the flavor without adding sugar. Avoid fresh pineapple, kiwi, papaya, and mango because their enzymes can prevent gelatin from setting. Store covered in the refrigerator for up to 4 days.
